Asian Rainbow Soba Noodle Salad
Ingredients
4 Cauliflower Schnitzels from The Cool Gardener
Sauce: 3 Tbsp Lime Juice 3 Tbsp Water 3 Tbsp Soy Sauce 1 Tbsp Tahini 1 Tbsp Minced Garlic 2 Tbsp Pure Maple Syrup 2 Tbsp Apple Cider Vinegar 1/4 Tsp Paprika Salt & Pepper to taste
120g Soba Noodles 2 cups of Purple Cabbage 1 large Carrot 1 Zucchini 1/4 Capsicum 1/4 Cucumber
Optional: Lemon & Avocado & Sesame seeds.
Method
Prepare soba noodles according to the packet’s instructions.
Drain noodles and transfer to cold water to cool.
Mix all sauce ingredients in a bowl, adding salt and pepper to taste.
Finely chop your veges and mix in a large bowl with the noodles.
Prepare your sauce and mix it all well with veges and noodles.
Prepare Cauliflower Schnitzels are per packet’s instructions.
Serve with greens, avocado, lemon and sesame seeds.
