Beetroot Pattie Poke Bowl

Ingredients

1/2c rice, rinsed 2 The Cool Gardener beetroot & Dairy Free Feta Patties 1/4c edamame beans 1/4c red cabbage, chopped ¼ avocado, sliced 1/3 small carrot, shaved with a peeler 1/4c sprouts 1t sesame seeds 2T Barkers Professional farmstyle plum and tamarillo chutney

Method

1. Preheat oven to 180C and line a small baking tray with baking paper.

2. Add rice and 1c water to a medium saucepan and follow the cooking instructions on the packet.

3.  Bake The Cool Gardener beetroot patties in the oven for 13-15 minutes then cut into cubes.

4.  Cook the edamame beans in a mug with 1T water in a microwave for 2 minutes.

5.  Spoon the rice into a bowl and place the other ingredients on top. Serve with Barkers professional plum and tamarillo chutney.
