Fresh Spring Brown Rice & Asparagus Salad
Ingredients
Dressing:
1 1/2 tbsp Water
3 tbsp Lemon Juice
1 1/2 tsp Mustard
1 1/2 tbsp Minced Garlic
2 tsp Pure Maple Syrup
Salt & Pepper to taste

3/4 cup of Brown Rice
1 1/2 Cup of Water
The Cool Gardener Falafel
8 stalks of Asparagus
1 Large Orange
2 - 3 cups of Lettuce
1/2 Large Avocado
Cherry Tomatoes
1/4 Cucumber
1/4 of each red + yellow Capsicum
Small handful of Roasted Almonds
Salt & Pepper to taste
Method
Preheat your oven for the Falafel. Put rice and water with a dash of salt in a large pan to cook. Once cooked, transfer into a cold bowl to begin cooling.
Prepare the salad! Wash lettuce, cherry tomatoes, asparagus, cucumber and capsicum and chop up everything to your liking. Dice your orange and avocado. Toss all through in a large salad bowl.
Prepare your dressing. Mix all dressing ingredients together in a small bowl and mix well. Pour over the salad and toss again, making sure it goes through the whole salad. Leave to sit while your rice cools.
Meanwhile, place the Falafel on a baking tray and cook as per instructions on pack.
Toss the rice through the salad, do this well to make sure it gets mixed through and the rice absorbs flavor from the dressing too.
Dish up the salad, place the falafel on top, season with salt and pepper and sprinkle with your choice of seeds for some extra healthy fats (optional).
