Kumara Rosti Stacks
Ingredients:
4 x Farrah’s Superbeet Wraps 10 x The Cool Gardener Kumara Rosti 1 Avocado 1 Tomato Lettuce Purple Cabbage Sliced Capsicum Sauerkraut Hummus or vegan mayo Lemon Juice Salt & Pepper
Method:
Preheat oven to 180C. Bake rosti as per box instructions for 10-12 mins.
Using a glass that is a similar size to the rosti (or even bigger), press and cut out the circles from the superbeet wraps.
Prepare your salad, mash some avocado into guac with a dash of lemon juice and pepper, and get all your stack ingredients out.
Once the rostis are baked, it’s time to stack! Per rosti: one wrap circle, a lettuce leaf, slice of tomato, salt and pepper, hummus or vegan mayo and another wrap circle. Then add on top a kumara rosti, sauerkraut, capiscum, purple cabbage and a thick layer of guac. Top off with another wrap circle and sprinkle with black sesame seeds. Press a mini skewer through each stack to hold them together and serve!
