Mediterranean Falafel Bowls

Ingredients:

1 x Farrah’s Chia, oat and Hemp seed wrap 3 - 4 The Cool Gardener Falafel Mixed salad greens Diced tomato, cucumber and red onion Hummus Tofu Feta Chili flakes, salt, pepper and fresh lemon to season

Vegan Feta: 100g Firm tofu 1 tsp Dried basil 1tsp Dried oregano 2tsp Lemon juice 1 tsp Apple cider vinegar 2tsp Extra virgin olive oil 1tsp Nutritional yeast Black pepper

Method:

To prepare the vegan feta, crumble Tofu finely into a bowl. In a small separate bowl, add all other ingredients and stir.

Pour this mix over the tofu and massage it into the crumbed tofu. Sit in the fridge while you prepare your bowls.

Preheat oven to 180C. Press each wrap into a tortilla bowl tin and bake for 8-10 minutes until crispy and lightly golden.

Cook the Falafel as per instructions on package.

Meanwhile, rinse and toss your salad leaves, dice your tomato, cucumber and red onion. Assemble into bowls.

Place baked Falafel on top, add a big dollop of hummus, sprinkle over plenty of vegan feta and season with salt, pepper, chilli flakes and lemon juice.
