Salad Buns with Lemon Pepper Tahini Sauce

Ingredients:

4 x The Cool Gardener Cauliflower Schnitzels 2 tbsp Greek Yoghurt 2 tbsp hulled tahini 1 tbsp water 1/2 tsp lemon pepper seasoning (can also use sumac) 4 buns of choice Handfuls of salad greens 1/2 cucumber, thinly sliced 1 avocado, sliced

Method:

  1. Cook The Cool Gardener Cauliflower Schnitzel as per the package’s instructions.

  2. Meanwhile, whisk yoghurt, tahini, water and lemon pepper in a small bowl until creamy. Ajust water to your desired consistency.

  3. To assemble, spread each bun with some sauce and top each bottom bun with salad greens, cucumber, cooked cauliflower schnitzel and avocado. Top with remaining sauce. Enjoy!
