Strawberry Quinoa Summer Salad
Ingredients
Falafel - The Cool Gardener
1/2 cup raw Quinoa
8 large asparagus spears
1/4 cup sliced capsicum
1/4 cup sliced cucumber
3 large handfuls of salad greens
8 - 10 large strawberries
1/2 avocado
Dressing
2 tsp soy sauce
1/4 cup lime juice
4 tsp sweet chili
1 tbsp minced garlic
4 tsp coconut sugar
2 tbsp extra virgin olive oil
1 tbsp water
black sesame seeds, salt and black pepper to serve.
Method
Cook Falafel as per cooking instructions on pack.
Add rinsed quinoa and a pinch of salt to a pot, add 1 cup cold water and bring to a boil. Once boiled, reduce to a low heat and cook until fluffy! Set aside to cool in the fridge.
Add a little olive oil to a medium-high pan and half cook your chopped asparagus until it is not raw but still has a light crunch. Set aside.
Mix all dressing ingredients in a bowl.
Slice your capsicum, cucumber, strawberries, avocado and thoroughly rinse your salad greens. Mix these plus the asparagus in a large salad bowl and toss. Pour over your salad dressing and toss again, making sure the dressing goes right through the salad!
Mix through your cooked and cooled quinoa, season with black sesame seeds, salt and black pepper. Serve with falafel and toasted pita bread. Enjoy!
